As Jossi did, Joe Widmer uses real brick to press his cheese, the same bricks his grandfather used in 1922. After pressing, the cheese is placed in a salt brine for 11 hours, then moved to a warm, humid curing room where it is washed and turned daily for seven to 10 days. It is then packed in parchment paper and foil. It reaches peak flavor at four to five months. This semi-soft cheese has a pleasant, earthy flavor that intensifies with age. Widmer's Aged Brick is also available with caraway seeds. Suggested re- tail price is $12.99 to $15.99/pound. San Francisco Salt Company www.sfsalt.com Glass Packaging for Specialty Food Food and beverage companies choose glass because glass con- tinues to be an innovator in pro- tecting what's inside, as well as the environment. Glass has little-to-no chemi- cal interaction, and 90 percent of consumers favor glass because it best preserves the taste of the food and beverages. Plus, glass has a longer shelf life than any other packag- ing material. Furthermore, glass is one of the safest packages for food and bev- erages. It's made from 100 per- cent raw materials, so it's naturally protective and nontoxic. Glass bottles and jars are the only pack- aging that doesn't require a chem- ical liner that may affect the taste of food. Glass containers are 100 per- cent and infinitely recyclable, and do not harm oceans or marine life. Choosing glass helps reduce the 8 million metric tons of plas- tics headed into our water each year.
