"Our chocolate by itself is both exquisite and healthy, but we saw a need to pro- vide inclusions to satisfy different tastes," says Brent Davis, President of Davis Choco- late. "We add peanut butter chips, nibs, raisins, cranberries, Himalayan pink salt and quinoa, and we have more flavors in the works. Almond is currently being de- veloped. And like all of our chocolates, our inclusions are organic as well as additive- , preservative- and soy-free." "The inclusions are currently available in our popular dark chocolate line, with the possible addition of white and milk choco- late at a later date," said Davis. "We create our dark chocolate in 30, 50, 60 and 70 percentages. The inclusions are a wonderful addition for those who prefer a little variety to their chocolate." Since 2011, Davis Chocolate has offered private label organic chocolate to choco- latiers, specialty food distributors, hotel chefs and pastry artisans to elevate the ex- perience of their clientele. Consumers may purchase products on both Amazon and the Davis Chocolate website. As Indiana's only bean-to-bar chocolate manufacturer, Brent Davis has traveled around the world to many chocolate farms – including Ecuador, Hawaii and the Do- minican Republic – in search of the best beans. In choosing the Ecuadorian beans – which have a superb flavor and are organic and Fair Trade – he appreciates the fact that his purchase from Ecuador mean more money goes toward the hard-working farmers than in other countries. Davis Chocolate produces dark, milk and white chocolate bars; chocolate bars with inclusions; raw and powdered cocoa nibs and chocolate and peanut butter chips for baking; wine sticks for wine and chocolate pairing; wave sticks for yogurt, ice cream, cakes, and just plain eating; liq- uid chocolate; truffles; and chocolate prod- ucts packaged for others, creating custom orders ranging from as little as 20 pounds to hundreds of times that amount. Her buyer at Walmart knew the challenges of work- ing with a small niche brand and Wilson ac- cepted advice from the Walmart team as she crafted an updated look and feel of the line packaging and the flavor profiles. The Microwave Single Serve item was created by Wilson in 2016 when her nine- year-old daughter grew tired of the mess and misfires of her Pinterest mug cake recipes and suggested her mom package up the perfect recipe for her.
