GOURMET NEWS AUGUST 2018 www.gourmetnews.com SFFS WRAP-UP 1 6 As part of its 30th-anniversary celebration, Olé Mexican Foods added an all-new Sprouted Whole Grains 8-inch Tortilla Wrap to its popular Xtreme Wellness line. This new tortilla represents Olé Mexican Foods' continued commitment to provid- ing high-quality, healthy options that use the latest science to understand nutrition and healthy living. The new sprouted whole grain wraps provide a tremendous amount of benefit to those who want a de- licious alternative to traditional tortillas. What is Sprouted Grain? Sprouted grains are seeds that are going through the sprouting process. Before sprouting, grains are primarily made up of dense starches to protect and feed the seed until it can grow into a plant. During the sprouting process, many of these starches are converted or released to help the grain seed grow and establish a healthy plant. By allowing the grains to sprout, Olé Mexican Foods can drastically change the nutritional value of its tortillas — providing a product that is easier to digest and more nutritionally dense. What are the Benefits of Sprouted Grain? Sprouted grains kill phytic acid, which is thought to be a mineral blocker and en- zyme inhibitor. It binds to minerals and in- hibits digestion. As an example, a wheat bread may say "contains 10 grams of cal- cium and 5 grams of magnesium," but most of those vitamins and minerals in the bread are bound up in phytic acid. A study by Weston A. Price Foundation has shown that 80 percent of the iron and magnesium in whole grain breads can't be digested at all because of the phytic acid. Allowing the grains to sprout prior to pro- cessing them into breads kills off phytic acid, unlocking nutrients like iron, zinc, magnesium, phosphorous, and other vita- mins and minerals so your body can digest and absorb them. It's also thought that sprouted grains improve digestibility of gluten and other proteins. It is well-documented that gluten (that sticky protein found in wheat) can cause intestinal inflammation and lead to digestive and health issues for some people. By allowing the grains to sprout prior to processing, the glutens can be- come predigested by the grain itself and improve the breakdown and digestion of these proteins. Sprouted grains contain more fiber and whole food-based nutrients. Traditional grains are very high in carbohydrates that can negatively affect blood sugar levels. Sprouted grains are typically higher in fiber and have more easily digested nutrients in them. The body uses this plant-based fiber to remove toxins and other waste prod- ucts from the digestive sys- tem. The Xtreme Wellness Sprouted Whole Grains Tor- tillas are made with four dif- ferent sprouted grains to provide excellent nutritional value and delicious taste and texture. These tortillas are made with extra virgin olive oil to provide the added benefit of Omega-3 fatty acids. So, try the new Xtreme Wellness sprouted grain tortilla wraps, an exciting new product for another great healthy op- tion with delicious taste and improved nu- tritional benefits. Boasting sweet, smoky and spicy notes from its namesake ingredient, this sauce promises to bring some major umami fla- vor to summer's cookout season. Hailing from Korea, gochujang is an im- mensely popular condiment in East Asian cuisine dating back hundreds of years, al- though Americans have only recently started to clamor for this pungent chili paste. Fiery red peppers pack the heat, soy beans bring the funk and cooked gluti- nous rice adds a touch of sweetness in this mixture that, once blended all together and then fermented, develops a deep red color and a rich, piquant taste. The result is a delicious, versatile condiment often featured in foreign classics like the mari- nated beef dish bulgogi and the comfort- ing rice bowl bibimbap, but the possibilities don't stop there. As Korean food continues to build momentum in the U.S. and fermented fare gains traction in the health industry, gochujang is poised to be one of 2018's hottest ingredients. With a taste to match its trending power, Stonewall Kitchen jumped at the chance to incorpo- rate gochujang into one of its premium grill sauces. Using rice wine vinegar, ginger, garlic and soy sauce to further bring out gochujang's many dimen- sions, the company has succeeded in creating a Korean barbecue sauce that's sure to become a customer favorite. Perfect with just about any grilled meat or seafood, Stonewall Kitchen's Gochujang Sauce is also easily adaptable for a multitude of recipes and fusion mashups. Try it in let- tuce cups (a recipe that's included on the label), slathered onto vegetable skewers or poured over stuffed, steamed buns. It's an unexpected, tasty way to experiment with a new cuisine or else shake up American standbys like burgers, hot dogs and wings.
