Food Magic Daily Monday, July 16, 2018 4 Functional Ingredients from Kerry By Donald Cox, Ph.D., Director R&D for GanedenBC 30® and Wellmune ®. If you don't know by now, you are miss- ing a key trend among the increasingly educated health and wellness consumer. Immune support has risen to be the sec- ond-most desired health benefit con- sumers want from products (GlobalData global consumer survey, 2015), and immune health is the No. 3 most emer- gent functional claim in global food and drink (Mintel, January 2017). Recognizing the opportunity for innova- tion across food, beverage and supple- ment product categories, product manu- facturers are turning to functional ingre- dients to meet demand. While there are many ingredients that claim immunity support, more con- sumers are becoming interested in beta glucans for immune health because of their science-backed proof of efficacy. While awareness is growing, confusion exists in the market about the different sources of beta glucans, the benefits each can provide and how effective they can be – particularly for immune health. How can product manufacturers best evaluate a beta glucan for creating an immunity- p o s i t i o n e d product? First and foremost, it is important to understand that variations in source, strain, chemi- cal structure and processing all play a key role in the benefit a beta glucan may provide. While there are several differ- ent sources of beta glucan, it is impor- tant to pay close attention to the research and characterization of each. Ask questions such as, what is the source and strain of the beta glucan? Has the mechanism of action been Agtron Quality Control Analyzers Agtron color measurement and process quantifying instrumentation is invaluable in controlling the quality and consistency of food products. Agtron's bench-top units are fully self-contained, accurate, repeatable and easy to use. The flavor and appearance of food is directly related to the degree of process; the quantitative measurement of color and color-related process variables are imperative for maintaining absolute and customer perceived consistency and quality. Agtron spectrophotometers are designed to provide high resolution analysis of color/appearance variations as they relate to degree of roast, bake, fry and fruit maturity for a wide variety of food products. Agtron analyzers perform product analysis by illuminating the surface of the sample being tested with specific wavelengths of light and then measur- ing the reflected energy signature. The analysis results are user configurable, and depending on the application, can provide comprehensive information, or be displayed as a single pass/fail quali- ty control number. Many products require little or no sample preparation before being tested, making it easy for multiple users to achieve consistent results. Agtron has experience with many types of food products and offers a free laboratory test- ing program. Samples sub- mitted are test- ed to determine the spectral activity as it relates to the associated process index. The results determine which Agtron sys- tem, methods and specific measurements should be used to produce the most accu- rate and repeatable results. The Agtron sales, laboratory and technical staff are always available for customer support. Visit Agtron at booth #S4123.
