Food Magic Daily 2 9 Monday, July 16, 2018 grain japonica rice. Western Foods' par- ent company, Western Milling, based in Goshen, California, is one of the largest privately held feed companies in the world with facilities throughout the Western United States. WF started busi- ness in 2010 and has grown exponential- ly, riding the wave of the gluten-free trend. Its dedicated gluten-free rice and ancient grain mill and blending facility have all the necessary accredited quality certifications in order to provide safe products for your business. WF has always been a dedicated gluten-free facility, conforming to the California Certified Organic Farmer's (CCOF). WF is also a member of the Whole Grains Council, Non-GMO Project Verified and the facility is certi- fied SQF Level 2. WF is dedicated to milling hypo-allergenic rice flours, long, medium and sweet together with ancient grains focusing, but not all- encompassing, on sorghum, millet, quinoa, amaranth and teff, creating turnkey custom ready formulations in the gluten-free snacks and baked goods arena. WF has a state-of-the-art inline mill to produce organic and convention- al rice flours utilizing specialized Japanese style rice milling techniques to manufacture to the tightest granulations such as meal, course, fine and extra fine specifications. WF has recently launched púro™, a validated pathogen reduction process Western Foods (Cont'd. from p. 1) which is a highly effective, fully validat- ed five log pathogen reduction process that mitigates the microbial risk associat- ed with raw flours produced from rice and ancient grains. It reduces or elimi- nates harmful bacteria, pathogens, mold, e-coli, yeast and microbes in specialty whole grains and whole seeds. Western Foods, LLC, is increasing its gluten-free rice flour and ancient grain milling business by expanding into a new 56,000 square-foot facility located in Pine Bluff, Arkansas. The new state-of- the-art, dedicated gluten-free flour mill becomes fully operational in July, 2018. The new mill is located on a nine acre lot within Jefferson County Industrial Park in the Pine Bluff, Arkansas area. The plant has ample room for future growth. WF's new Delta Region facility, in the central U.S., has an excellent multi- modal transportation system, including two rail lines (Burlington Northern Santa Fe and Union Pacific), 13 common freight carriers with five terminals, and the Port of Pine Bluff, a slack water har- bor located on the Arkansas River. Pine Bluff is 38 miles from Little Rock, Arkansas and 137 miles from Memphis, Tennessee. Finally, WF has the necessary equip- ment to offer retailers both branded or private label flexible package options for gluten-free mixes, snacks and other relat- ed products. For over a decade, he was an adjunct pro- fessor at Purdue University where he cre- ated the first culinary class offered by a major undergraduate food science uni- versity. We were also impressed by his passion and his food philosophy – like us, he's committed to the natural, clean label and real food movements. Also, he's a great fit for our solutions for great taste. He's very focused on creating 'craveability,' which ultimately is what umami helps you achieve, and what SANTE and CTC can provide in savoury products. The concepts Charlie has creat- ed are the perfect way to showcase that. FMD: How can your flavor products help manufacturers? CL: To put it simply, we can help manu- facturers clean up labels while enhancing Lycored (Cont'd. from p. 1) taste and consumer appeal. SANTE pro- vides a high concentration of the com- pounds that produce umami and kokumi, and accentuates existing flavor character- istics while remaining taste-neutral. It's the perfect solution for removal of MSG or yeast extracts, HVPS or artificial fla- vors while giving a great taste boost, and it allows a reduction in sodium from salt by 30 to 65 percent in some applications. CTC is a liquid serum that harnesses the balance of acidity and high Brix sweetness found in tomatoes to bring smoothness and complexity to savoury products, particularly tomato-based prod- ucts such as soups and sauces. Both SANTE and CTC can be declared as con- sumer-friendly 'tomato concentrate' or 'natural flavor,' depending on local regu- lations. What has the research found? Is it safe and how has safety been verified? With this in mind, manufacturers look- ing to capture demand are coming to Kerry and looking to innovate with our proprietary strain of baker's yeast beta glucan, called Wellmune. What sets Wellmune apart from other strains and sources of yeast beta glu- cans is that it is a patented ingredient, employing a proprietary manufacturing process and having a significant body of published, peer-reviewed clinical research supporting its ability to help support immune health in all ages. This unmatched research is specific to Wellmune, which provides product manufacturers the ability Kerry (Cont'd. from p. 4) to differentiate their product with a unique functional ingredient, while offering the health benefits consumers want. Wellmune is also a leading global brand recognized by consumers for its clinically-proven immune health benefits, providing a simple-to- understand ingredient that makes purchase decisions easier. Kerry, the taste and nutrition compa- ny, is showcasing Wellmune at this year's IFT booth. Gen III Outdoor Condensing Units Include Enhanced Feature Packages Tecumseh's popular Gen III Series Commercial Refrigeration Outdoor Condensing Units have been upgraded to include enhanced feature packages. Feature packages provide refrigeration contractors with a preferred set of options based on outdoor ambient temperatures that are associated with northern U.S. and Canada, and southern U.S. climate zones. The Gen III "Silver" feature package is designed for southern U.S. climate zones and the "Platinum" package contains appropriate options for northern U.S. cli- mate zones. Canada's colder climate is well served by the "Gold" feature package. New Gen III feature packages simplify product selection and ordering, and deliver more value at a competitive price. Popular Gen III condensing unit models are stocked and readily available for shipment. Standard options with the Gen III "Silver" feature package include service valves, head pressure control, crankcase heater, high and low pressure limit switch- es and/or adjustable dual pressure control, receiver tank, filter drier and sight glass. All low temperature Gen III models also include an electric defrost timer. The "Platinum" feature package includes all of the options listed with the "Silver" package plus an air defrost timer on medium, commercial and high tem- perature models. Another "Platinum" package differentiator is the inclusion of an adjustable fan control. All "Platinum" models use an adjustable dual pressure control. The "Platinum" feature package also includes a suction line accumulator and suction filter on low temperature Gen III outdoor condensing unit models. Gen III "Gold" feature package includes a suction line accumulator and filter, service valves, crank case heater, adjustable low pressure control, high pressure limit switch, receiver tank, filter drier, heated insulated liquid-line receiv- er, sight glass, check valve, head pressure control, adjustable fan control (dual fan models) and electric defrost timer (low temperature models only). All Gen III Outdoor Condensing Units feature reliable Tecumseh recipro- cating or scroll compressors, paired with efficiently sized coils for optimum per- formance.
